Crystal, Val's best friend, and I recently formed a band and are in the process of writing and recording a handful of songs. We're currently looking for a drummer, hoping to launch a MySpace page soon, and are looking for a good band name. Suggestions anyone? So far we've ruled out: The Astonishing Dinosaur People, The Perverts and Brown Menace. (Sorry in advance if we've already ruled out your suggestion; it's just not going to happen).
Meanwhile Val and I have been trying to get back into beach-body shape, so I decided to make something that's relatively healthy and hearty, yet very tasty. This is a recipe of mine that's a sort of fusion between a friend of mine and Michael Chiarello's:
1 large can of petit diced tomatoes
1 medium can of crushed tomatoes
1 small can of tomato paste
1 can of corn
1 can of garbanzo beans
1 can of kidney beans
1 can of pinto beans
1 serrano pepper diced
1 jalapeno pepper diced
1 packet of McCormicks chili seasoning
1 teaspoon of cocoa powder
1-2 bottles of beer
Bring to a boil then let simmer for 2-24 hours
We placed 1-2 corn tortillas inside a bowl and ladled chili on top. Then we sprinkled grated habanero cheddar and chopped green onions over the chili. Though warm and comforting, this is a very light chili that's great for summer eating.
This weekend we reused our leftover chili in an omelet topped off with chives. This is a three-egg omelet with about 1/4 cup of chili added to it.
Happy 4th of July from me, Tofu, Lucky and of course Val! (Tofu and Lucky will be united today when we celebrate our niece's birthday. Tofu probably doesn't care, though. She hates that dog).

I always wondered about that second dog..didn't want to ask. Now I know tofu doesnt' like sharing her parents
ReplyDeleteYeah, Tofu was trying to kill the other dog :(. And she was even acting out toward us - growling, hiding under the table instead of cuddling on the couch like she usually does.
ReplyDeleteMy parents wanted a pug, so the timing was right. Now everyone is happy :)

ReplyDeleteNice recipe. I make a similar chili but I don't usually put beer in it, just drink beer with it. I'm going to switch it up next time - thanks for the inspiration.
ReplyDeleteSusan & Abraham: Thank you so much! We love the tamarind chutney recipe on your blog :)
ReplyDeleteAnonymous: Thanks for visiting!. The beer brings a tang and deeper flavor to the chili. Good luck :)
ReplyDeleteLook delicious! I like how you added beer to the dish. Happy Top 9! Cheers.

ReplyDeleteThis chili is pretty much all my chili-related dreams (of which there are many) come true! Three kinds of beans?! It's just more than my bean-loving heart can stand. Great job!
ReplyDeleteThanks, Koci :) If you try the recipe out, do let us know. There are only two of us at home, so the chili lasts for days. It's awesome.
ReplyDeleteThat's what I'm talking about, I'm a vegetarian so I love vegetarian chili. And what an awesome name for a dog, Tofu, now I'm jealous that I didn't come up with an idea to call my baby girl Tofu :)
